# What You Need:

→ Chicken & BBQ

01 - 2 cups cooked chicken breast, shredded
02 - ½ cup BBQ sauce

→ Bread & Cheese

03 - 8 slices sourdough bread
04 - 8 slices sharp cheddar cheese
05 - 4 slices mozzarella cheese

→ Butter & Extras

06 - 4 tbsp unsalted butter, softened
07 - ½ small red onion, thinly sliced
08 - ½ cup pickled jalapeños, drained

# Steps:

01 - Combine shredded chicken breast with BBQ sauce in a medium bowl, tossing until evenly coated throughout.
02 - Lay out sourdough slices and spread softened butter on one side of each slice. Place bread butter-side down on preparation surface.
03 - Place cheddar slice on 4 buttered bread slices. Top with BBQ chicken mixture, red onion slices, pickled jalapeños, mozzarella slice, and remaining cheddar slice. Complete with second bread slice, buttered side facing outward.
04 - Heat large skillet or griddle over medium heat. Cook sandwiches for 3–4 minutes per side, pressing gently with spatula until bread achieves golden-brown color and cheese melts completely.
05 - Remove from heat, cut each sandwich diagonally in half, and serve immediately while hot.

# Expert Advice:

01 -
  • It turns leftover BBQ chicken into something that feels like a restaurant upgrade
  • The combination of sharp cheddar and melty mozzarella creates this perfect cheese pull situation
02 -
  • Low and slow heat wins the race I burned my first few sandwiches trying to rush things
  • Letting the sandwiches rest for just 60 seconds after cutting helps the cheese set slightly so it does not all slide out when you bite
03 -
  • Mayonnaise on the outside instead of butter creates an even crispier crust that will not burn as easily
  • Use a cast iron skillet if you have one for the most even heat distribution and best browning
