Watermelon Granita Sweet Summer Bliss (Printable)

Light, icy watermelon granita with lime and mint. Perfectly sweet and refreshing for summer days.

# What You Need:

→ Fruit Base

01 - 5 cups cubed seedless watermelon
02 - 2 tablespoons fresh lime juice

→ Sweeteners

03 - 1/3 cup granulated sugar

→ Optional Flavorings

04 - 2 tablespoons fresh mint leaves, finely chopped

# Steps:

01 - Combine watermelon cubes, lime juice, and sugar in a blender. Process until completely smooth and no chunks remain.
02 - Taste the mixture and add additional sugar if needed. If incorporating mint, fold in the chopped leaves until evenly distributed.
03 - Transfer the blended mixture to a shallow freezer-safe dish, spreading it into an even layer. Place in the freezer for 90 minutes.
04 - Remove the dish from the freezer. Using a fork, scrape the surface firmly to break up forming ice crystals and create a grainy texture throughout.
05 - Return the dish to the freezer. Continue removing and scraping with a fork every 30 minutes for 3 to 4 hours total, until the mixture becomes fluffy and granular throughout.
06 - Spoon the granita into chilled dessert glasses or bowls. Optionally garnish with additional fresh mint or lime zest before serving immediately.

# Expert Advice:

01 -
  • Its practically foolproof but tastes like something from a fancy Italian gelateria
  • The texture transforms into fluffy snow like crystals that melt on your tongue
  • You can make it ahead and it keeps beautifully for days
02 -
  • The scraping process is non negotiable. Skipping it just gives you watermelon ice, not granita.
  • A shallow container makes all the difference. Deep containers take forever to freeze evenly.
  • Granita melts quickly at room temperature. Serve it in chilled glasses and work fast.
03 -
  • Add a tablespoon of vodka for a softer texture and adult version. The alcohol prevents it from freezing quite so hard.
  • A little pinch of salt enhances the watermelon flavor just like it does for tomatoes.
